This is the best cabbage soup ever. Not that I’ve had a lot of cabbage soup. But it is LEGIT!!
It has lots of dairy, so if you are a non-dairy Paleo, you can stop reading.
As usual, I started somewhere with someone else’s recipe and modified it like crazy for what I have in my kitchen. Here’s my take on MeCookingCreations original recipe:
- 1/2 bag frozen onion
- 1 head of cabbage “grated” … I put it in The Ninja, which obliterated it into small pieces like you would get if you chopped it very tiny
- 1 container free-range chicken stock (pretty sure it’s 4 cups)
- 2 c whole milk (I found a new brand! It’s Kalona Organics and it’s not homogenized and it’s pasteurized at 135 degrees, the lowest legal temp allowed. Plus their website says the milk comes largely from small, Amish / Mennonite family farms where the average daily herd is 30 cows and where most of the work is still done by hand. Many of these farms—most of which are on about 80 tillable acres—have been in the same family for 150 years and have never been touched by chemical herbicides or pesticides. HAPPY COWS!!)
- 1 c grated mozzarella cheese, with about 1/2 c parmesan thrown in too
- butter
- salt and pepper
Directions
- Heat the butter until it melts in a large, heavy soup pot.
- Add the onion and cook, stirring, until tender, about 5 minutes.
- Add the cabbage, stir together until the cabbage softens.
- Add the stock and salt/pepper to taste. Bring to a simmer, then cover and simmer over low heat for 30 minutes, until the vegetables are tender.
- Add the milk to the soup. Stir to combine well and heat through without boiling. Keep stirring.
- A handful at a time, stir the cheese into the soup and continue to stir until the cheese has melted.
- Taste, adjust seasonings.
- Serve. Always serve hot. There might be some weird cheese clumps if you don’t.
Seriously people, this stuff is amazing. Eat it today.
CAUTION: That Ripped Guy of Mine(TM) LOVED this soup. But a few hours later he went to work and sent me a text that said “Stinky!” … so a gentle reminder dear readers that cabbage may cause gas.
