I Made This: Carrington Cookies (or, a Protein Cookie base recipe)

Over the holidays—yes, as in eight months ago—an organic foods company sent me a cookie recipe.

Gluten Free Chia Seed Peanut Butter Cookies

Makes about 12 Cookies

Preparation:

1 ½ cups Gluten Free rolled oats
1 teaspoon baking powder
½ cup gluten-free all-purpose flour
1 ½ tabelspoons Carrington Farms Organic Chia Seeds
¼ cup Carrington Farms Coconut Oil, room temperature
½ cup brown sugar
¾ cup peanut butter
2 eggs
1 teaspoon vanilla
½ cup dark or semisweet chocolate chunks or chips

Instructions:

Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper
In a medium bowl, whisk together oats, baking powder, flour, and chia seeds. Set aside.
In the bowl of an electric mixer, beat coconut oil with sugar until creamy. Add peanut butter, eggs, and vanilla. Slowly stir in oat mixture to combine. Stir in chocolate chips.
Place heaping tablespoons of dough onto cookie sheet. Press dough into balls with hands, as dough will be crumbly. Bake 12 minutes. Cool and then ENJOY!

 

I obviously bastardized their recipe in my quest for protein cookies to get this:

I’d call these Superfood Peanut Butter Protein Cookies. Or maybe Kitchen Sink Protein Power Cookies. Maybe even Oatmeal Chia Chocolate Chunk Protein Cookies.

Because what’s in a name? Coconut oil and chia seeds are superfoods, but chia seeds aren’t that sexy—they’re not going to make you want to bake or buy a cookie. But superfoods AND peanut butter, America’s addiction? Sign. me. up.

But what did I actually do? Sub 1 cup protein powder for the g-free flour and sugar, although I did add about 2 tbsp sugar to sweeten up the batter. The combo of PB and coconut oil means that even with that much protein powder, the cookies held up pretty well! The 1.5 cups of oats certainly helped the starchy hold.

Overall, this recipe is a good base for a kitchen-sink cookie, where you throw in whatever you have as far as nuts, dried fruits, and chocolates are concerned! You could even sub coconut flakes for some of the oats. I’ll make it again (now that I’ve found it in my Drafts folder of my blog and remember that it exists …)
