OK, so I told you I deleted this post in the Blog Posts I Never Wrote post, but I didn’t, because I found the photo I had taken and I didn’t want to waste that. So, resurrected (because nothing ever dies in this digital world) this post from Nov 3, 2014, and then realized this wasn’t even the post that went with the photo! (I DID delete that post) Blogging is hard. Making decadent treats that disguise some protein? Not hard.

Protein. Nearly everyone needs more of it.
And sweets. Nearly everyone needs less of them.
Combine the two = an excellent idea.
Bringing PB Protein Chocolate No Bake Bars to your office potluck? Maybe not an excellent idea. They’re not imitation good.
However, without further ado, here’s the recipe for an easy, fast homemade protein bar/decadent dessert with protein.
Ingredients:
- 1 cup peanut butter (or almond butter or cashew butter or whatever butter)
- 1/2 cup coconut oil (or grass-fed butter)
- 1 cup oats
- 1 cup coconut flakes (because shredded coconut is gross)
- 4 scoops vanilla grassfed whey protein (+ a few scoops of collagen if you like)
- 1 cup chocolate chips (Guittard, because they’re the best, or Trader Joe’s dark chocolate pound baking bars that are supposedly Scharffen Berger)
Do it:
- Melt peanut butter and coconut oil together in a saucepan over medium heat, stirring pretty constantly or it’ll burn
- Remove from heat when melted, pour into mixing bowl and add chocolate chips, stirring until melted
- Add oats, coconut, and protein
- Line a 9×9 baking dish with saran wrap; pour mixture into baking dish and press to even out the top
- Freeze for 10 minutes, cut into 16 pieces
