No need for the Starbucks gut-buster we all know and love. You can make your own pumpkin spice latte, healthier, and it is awesome. For my earlier version of a make-at-home PSL, using protein powder, click here.
Make the Pumpkin Spice Latte:
- 2 tablespoons coconut milk (full fat)
- 1-2 tablespoon pumpkin puree (I use canned, it tastes canned, I don’t have time to puree my own pumpkin)
- OPTIONAL 1-2 tablespoon(s) raw honey
- cinnamon, nutmeg, allspice or pumpkin pie spice to taste
- 1/4 cup cold brew coffee + boiling or very hot water to the top of the mug
OR
8 ounces brewed coffee - ***bonus ingredient: raw egg. yeah, I said it, don’t do it if you’re afraid of raw eggs. It adds a creamy consistency (you could even skip coconut milk) and protein in the morning.
Stir vigorously.
Drink. Preferably while relaxing on a patio.
Make the Pumpkin Spice Frappuccino (pictured):
- 2 tablespoons coconut milk
- 1-2 tablespoon pumpkin puree
- OPTIONAL 1-2 tablespoon(s) raw honey
- cinnamon, nutmeg, allspice or pumpkin pie spice to taste
- 1/4 cup cold brew coffee + 1/2 cup (or more) water
OR
8 ounces brewed coffee - handful ice cubes (add more if it’s not thick enough for you)
- ***bonus ingredient: raw egg!
Throw it all in a blender and blend. Drink, preferably snuggled under a blanket.
